1 Cooked Pig’s Ear (300g)
1 Inexperienced Chilli Pepper
1 Crimson Chilli Pepper
3 Cloves Garlic
50g Celery
15g Coriander
2 Spring Onions
1 Tsp Inexperienced Peppercorns
1 Tsp Sesame Seeds
1 Tbsp Spicy Fermented Soy Bean sauce
1 Tbsp Mild Soy Sauce
2 Tbsp Malt Vinegar
1 Tbsp Chilli Oil
1 Tsp Sesame Oil
1 Tsp Sugar
Salt (Elective)

1. Finely chop the garlic
2. Lower the chilli peppers and spring onions into skinny threads
3. Thinly slice the celery
4. Roughly chop the coriander
5. Thinly slice the pig’s ear
6. Add 1 Tbsp oil in a wok, add peppercorns and sesame seeds, fry on low warmth for two minutes, then take away from warmth
7. Place the sliced ear in a big bowl
8. Add the components from the wok and blend
9. Add garlic, soy sauce, chilli oil, sesame oil, fermented soya bean, vinegar and sugar, combine nicely
10. Add celery, chilli peppers, spring onion, coriander and salt to style, combine nicely
11. Switch onto a dish and serve
