Kunna Paya:
Mutton trotter boiled 6
Oil ¼ cup
Onion sliced ¼ cup
Ginger garlic paste 1 tbsp
Salt as required
Purple chili powder 1 tbsp
Coriander powder 1 tbsp
Turmeric powder ½ tsp
All spice powder ½ tsp
Butter ¼ cup
Mutton inventory 4 – 5 cups
Flour as required
Black cumin 1 tsp
Lemon for garnish
Inexperienced coriander chopped for garnish
Inexperienced chilies sliced for garnish
For Tempering:
Oil ½ cup
Onion sliced ¼ cup
Pan males oil garam onion ko halka brown ker len phir lehsan or adrak ka paste dal ker payai dalen or khoob achi tarhan bhoon len phir zeeray kay ilawa tamam sukhay masaly dal ker 1 se 2 minutes tak phir bhoon len phir thori si bakray ki yakhni dal ker 10 minutes kay liye dum per chor den phir butter dal ker khoob achi tarhan bhoon len jab butter or gravy alag alag ho jae too tamam yakhni dal ker pani males ghula huwa aata shamil ker kay half-hour tak dhimi anch per paknay den phir kala zeera dal ker tarka laga len.

Lahori Kulcha:
Fantastic flour 500 gm
Yeast 1 tsp
Salt as required
Egg 1
Ghee 1 tbsp
Soda bi-carbonate ¼ tsp
Water as required
Sesame seeds as required
Ek mixing bowl males until kay ilawa tamama ajza dal ker aata goondh len or phir 10 minutes tak aatay ko relaxation de len. Phir pairay bana ker mazeed 10 minutes tak res de len phir pairay bail ler baking dish males lagaen or higher se until laga ker pre heated oven males 10 se 12 minutes per 180C per bake kerlen.

Rooster Ginger:
Rooster with bone 500 gm
Clarified butter ½ cup
Ginger paste 2 tbsp
Onion paste 1 cup
Tomato chopped 2
Yogurt ¼ cup
Salt as required
Purple chili powder 1 tbsp
Turmeric powder ½ tsp
Cumin crushed ½ tbsp
Coriander crushed 1 tbsp
Ginger julienned 2 tbsp
Inexperienced chilies sliced 2
Coriander chopped for garnish
Karahi males ghee garam ker kay rooster ko namak dal ker fry ker len. phir thora sa pani dal ker dum per chor den jab rooster gal jae to adrak ka paste dal ker rooster ko achay se fry ker len phir tomato puree, dahi or chopped tomato dal ker 2 se 3 minutes tak dum per chor den phir tamam sukhay masalay dal ker achi tarhan bhoon len phir akhir males bareek kati adrak, hari mirchen or coriander dal ker combine Karen or mazeed 1 minute tak paka ker serve Karen.

Bajray ki Meethi Tikiya:
Pearl millet flour 1 cup
Sesame seeds 2-3 tbsp
Coconut crushed 2 tbsp
Jaggery ½ cup
Water ½ cup
Oil for frying
Ek mixing bowl males gur dal ker garam pani shamil Karen or gurko soften kerlen.
Ab dosray mixing bowl males bajray ka aata, until or khopra dal ker gur kay pani se aata goondh len phir atay ko 10 minutes ka relaxation de ker tikiyan bana len phir karahi males oil garam ker kay halki anch per tikiyan fry kerlen.
